Bachka Chorizo Serbian: Baka Salama} is remarkably rich and lavishly spiced and an absolute triumph of taste. This well respected classic has its regional origins in our family homeland of Bachka, in northern Serbia, and is redolent of picante Hungarian paprika and garlic. The richness of Bachka lingers in this already robustly flavoured cured salami creating a truly complex, bursting flavour that is difficult to replicate and impossible to forget. Its hot, but not so much that it overwhelms the great flavour. A popular favourite.

Bachka Salami is exceptionally rich in flavour and deeply intense. It is simply the best to savour it sliced thinly on bread, in an antipasto dish, with cheese and crackers or on a home-made pizza.

Our authentic recipe remains unchanged. We hand select specific pork meat, strictly from the back leg and completely trimmed of all fat, which is spiced and mixed with fatback, ground and stuffed into natural casings, hand tied in the optimum size then steadily cold-smoked. This sensational salami is then air-dried for about seven weeks to maturity.

Ingredients: NZ free-range pork, Hungarian paprika, salt, NZ fresh garlic, spices, beech-wood smoke.

Based in Onehunga, Salash Delicatessen is the first and only producer of truly authentic salami in New Zealand – they do not use starter cultures or any additives or chemicals in any of their products. Salash is a family business which started in 2009 but has a long history in meat curing. Originally from north-western Serbia, the Mirkov family is using traditional curing methods from their homeland that are over 300 years old. They proudly keep to their original family recipes – insisting on using only the best cuts of naturally raised meat and other selected all-natural, organic raw ingredients.
