Organic Quark

Quark is of Central European origin and is thought to have been made since the Iron Age. Quark simple means 'curd' in German. It is fresh white cheese, very similar to Ricotta.

It is a very versatile product that can be combined with savoury flavours (such as caraway, paprika or chopped spring onion) or sweetened with sugar or honey and eaten with desserts or for breakfast. It is also used in baked preparations such as savour and sweet pies, mousses and cheesecakes.

The texture is firm but a little crumbly and the flavour is mild and milky. Quark is made from pasteurised milk which has a starter culture added to it then some rennet to firm the curd. It is then hung in cheesecloth so that some of the whey can drain off. This product does not have any milk powder added to thicken it.

The Cheese Barn, owned and operated by Kelvin and Cathy Haigh has been a local family business for over twenty years. Kelvin is the principle cheese-maker and Cathy manages the cheese side of the business. They have a small and dedicated team who assist them in making, packaging and labeling the cheese.

Their BioGro certified organic cheeses and yoghurt's are unhomogenised, gluten free, have no GMO, no artificial additives, no antibiotics or growth hormones and no chemical sprays. They are the home of Champion award winning cheese since 1994.

They make a range of cow milk cheeses including: Traditional Dutch Gouda, Edam, Feta, Camembert, Brie, Halloumi, Blue, Mozzarella, Natural and Stevia Sweetened Liquid Yoghurt, Lactose Free Yoghurt, Greek Yoghurt, Quark, Cottage Cheese, Butter ​& Ghee.
