Arnel Vincencio crafts handmade vegan chocolate here in Christchurch. Childhood influences including his uncle’s Filipino bakery, food studies in the United States, French and Swiss colleagues, and a general love of food led him to pursue a life in baking (by night he bakes for Christchurch favourite Bohemian Bakery) and eventually, chocolate tempering.Mind Your Temper is a play on words, referencing the way the chocolate is made and the common phrase your mother probably told you as a child. Chocolate tempering involves heating and cooling chocolate to stabilise it for making candies and confections, and gives it a smooth, glossy finish.
