Durum wheat has the special qualities that authentic pasta needs, and luckily for all of us it has been recently reintroduced to New Zealand in the Wairarapa region after decades of not being grown here. All of their ingredients are seasonal, fresh, and as local as possible, and they work alongside growers to ensure quality production to get the standard of produce required for the most flavoursome pasta and sauces.
