Koefaga vanilla extract is created through the slow steeping of cured vanilla pods in food grade ethyl alcohol.
Niue grown organic vanilla pods are brought to New Zealand for extraction. For a full flavoured extract this process cannot be hastened. The texture of the liquid changes as the extraction matures, becoming slightly viscous and syrupy.
Traditional vanilla extract flavours mouthwatering baking, delicious ice creams, creamy custards, whipped cream for decorating desserts, in savoury dishes such as white and cheese sauces, gravies and to bring flavours together.

A naturally matured extract of organic vanilla pods steeped in food grade ethyl alcohol, Koefaga Vanilla Extract delivers the traditional favourite flavour in all manner of fresh and baked goods.
If you have to choose one vanilla product for your kitchen, the extract is the most versatile. For first time use, measure the quantities your recipe states, and subsequently the strength can be adjusted to your taste. Koefaga vanilla extract contains no sugar and is additive free.

Koefaga Vanilla

Patricia Hunter spends her year between Motueka and Niue Island, where she sources her cured vanilla pods from local growers and curers. The vanilla is grown under a group Bio-Gro organic certification scheme.
Vanilla is the only orchid to bear a seed pod. Vines are trained up support structures, often trees, and at flowering time, one flower on each bunch comes out per day, for a four to six week season. Every flower has to be hand-pollinated, contributing to the cost of the labor-intensive vanilla crop. The pods take nine months to mature and curing can take up to five months, all weather dependent. It then takes a year to steep the pods to get a good extraction before the extract and paste are packed. Niue grows the Tahitian variety of vanilla, recognised as an excellent culinary vanilla.
