A sauce inspired from the Calabria region in Italy. Feed the Soul make fresh sausage from scratch using free range pork, chilli powder, sweet paprika and a few fennel seeds as per tradition. The sausage meat is browned thoroughly and added to sautéed onions and delicious tomatoes, then simmered for a few hours.

Alba and Stephano are proudly the first pasta makers to use 100% local New Zealand ingredients, including the durum wheat harvested for their pasta. Durum wheat has the special qualities that authentic pasta needs, and luckily for all of us it has been recently reintroduced to New Zealand in the Wairarapa region after decades of not being grown here. All of their ingredients are seasonal, fresh, and as local as possible, and they work alongside growers to ensure quality production to get the standard of produce required for the most flavoursome pasta and sauces. They work with the seasons, and every week their menu changes to reflect what’s fresh and most delicious!
