Organic Freekeh

Freekeh, pronounced free-kah, is a Middle Eastern food with history tracing back to ancient Egypt. The Arabic name means to rub and refers to the process by which freekeh is made. Young green grains, mostly common wheat, are parched, roasted and rubbed. Because the grains are harvested while young, they retain the maximum nutritional value, not to mention the best flavour and texture. Freekeh is high in protein and fibre as well as essential nutrients such as selenium, potassium and magnesium. As with other whole grains, freekeh has low GI, meaning that it takes longer to digest keeping you feeling full for longer and providing sustained energy. Freekeh makes great pilafs, taboulehs and is a great ingredient in stir-fries, risotto and soups.

TO COOK: Cook 1 cup of freekeh in 2 cups of water or stock. Bring to the boil, then gently simmer until all liquid is absorbed and the grains are soft, about 15-20 minutes.
