This ricotta has a subtle fresh flavour that is light yet satisfying. It can be enjoyed with honey and fruit or with antipasto. It works well with pasta, salads and baking - it can be baked whole and served with pesto, herbs and olive oil. It is recovered by hand from the first split of the whey which gives a superior smooth and creamy consistency.
Clevedon Buffalo Co. Cheeses & Yoghurts are made with farm fresh milk from their herd of Riverine water buffalo which graze freely on lush open pasture in Clevedon. Buffalo milk contains 58% more calcium, 40% more protein and 43% less cholesterol than cow’s milk. Buffalo is a popular alternative for those who suffer from CMA (cow’s milk allergy).
